1 1/2 sticks butter
4 Large cloves garlic, minced
1 10 oz can minced clams (2 are even better)
1 8 oz.can drained and finely chopped water chestnuts
1/2 cup fresh coarse bread crumbs
salt and pepper to taste
Partially cooked bacon (optional)
Melt butter in skillet and saute garlic until pale gold.
Place clams and 1/2 their juice in bowl. Reserve remaining liquid.
Add all but 2 tablespoons of the garlic butter mixture to the clams.
Add the water chestnuts, bread crumbs, salt, and pepper.
Stir well and let stand for 5 minutes to thicken.
Spoon into small ramekins or clam shells.
Sprinkle with paprika and top with bacon (optional)
Mix reserved liquid with remaining garlic butter and drizzle over clams.
Broil until hot and bubbly. Serve with lemon wedges.
